My kids likes those Asian rice noodle soup bowls from Trader Joe's, and I'd like to make some at home instead of buying the prepackaged stuff. Does anyone have an Asian powdered broth recipe they can share with me? I'd like to come up with a powdered broth mix to have on hand and just add it to a bowl of boiling water with noodles and veggies.

I'm glad you started this thread. I've been thinking about trying to make a homemade version of those bowls, too, so I can keep supplies on hand at the office for quick lunches. I don't mind the cost of the prepackaged soup bowls from Trader Joe's, but the salt, and the waste generated by the packaging bother me. I'm not talented at inventing recipes, though, so I hope someone else has some suggestions!

Those are the two things that were bothering me too. I have found many liquid broth recipes, but I can't find anything powdered. I did find this one though that I might try with dry ingredients (garlic powder, ginger, vegan chicken bouillon) and just add water to it: http://avirtuouswoman.org/2011/07/08/as ... roth-soup/I'll post back if it turns out.

Oh let us know how it turns out! I was thinking of trying to come up with some vegan broth powder mixes myself.

Found this in my recipe database dated March 2003. No idea where it came from (and I always credit authors), so it was possibly included in an online recipe archive. An Asian-style recipe is included in the directions.
Bulk Homemade Vegan "Chicken" Noodle Soup Mix Serving Size : 16 Preparation Time :0:00
MIX: 1 cup chicken-like vegetarian broth powder (well-stirred) 1 cup dried soup vegetable flakes 1 cup dried textured soy protein (tsp or tvp) granules 1/2 cup nutritional yeast flakes 3 tablespoons dried onion flakes 4 teaspoons salt 1 teaspoon freshly-ground pepper 1 teaspoon garlic granules or powder
Stir the mix well before measuring!
FOR EACH SERVING MADE WITHOUT COOKING FACILITIES: Measure out a scant 1/4 c. and place in a cup or a bowl along with 1/4 c. broken fine rice stick vermicelli noodles OR vegan ramen type noodles (they are sometimes known as "steam-fried Chinese noodles"). (These have to be vegan noodles, like the rice vermicelli, or a pre-cooked type of dry wheat noodle that will cook just with soaking in boiling water.) Cover with 1 c. boiling water, cover, and let stand 5 minutes before serving.
OR, IF YOU ARE ABLE TO COOK THIS IN A POT OR MICROWAVE: Measure out a scant 1/4 c. mix and place in a small pot (or microwave-proof bowl with plenty of room for boiling up) along with 1/4 c. broken Italian vermicelli (very thin spaghetti-type pasta). Cover with 1 c. hot water, bring to a boil, then turn down and simmer just until the pasta is cooked. Or cook in the microwave for about 2 minutes, or until the pasta is tender.
ASIAN-STYLE NOODLE SOUP MIX: Use the broken fine rice stick vermicelli noodles. Omit yeast and use 1/2 c. powdered dried Chinese or shiitake mushrooms (remove stems and powder in a DRY blender) instead. Add 1 tsp. powdered ginger and (optional) 1 tsp. dulse or nori seaweed flakes.
SUGGESTION: Each 1/4 c. of mix 1/4 c. of noodles for each serving can be measured out and mixed in a small zip-lock bag, or in a square of plastic wrap gathered up with a twist-tie; then all the bags placed in a container.

Where does one find such a thing? Any suggested brand? I currently used Better Than Bouillon, but that's not powder, and no "chicken" flavor, but I'd really like to find something like this for assorted purposes.

Where does one find such a thing? Any suggested brand? McKay's or Bill's Best "Chicknish" (something like that) are supposed to be pretty good. I've been able to buy it in stores that sell it in bulk bins, as well.

I've found big cans of it at Asian grocery stores. I can't remember the brand off the top of my head, but it's a yellow can with a picture of a chicken on it. It's WAY salty, though.

Rainbow grocery has it in their bulk section! So does Berkeley Bowl. My local whole foods has also started carrying the bulk stuff.
