I would like to know if anyone has hints or suggestions for replacing oil in recipes.

do you want to remove the fat entirely, or are you talking about substituting it with margarine or shortening or something?

I also think it depends on the recipe. Some recipes, it honestly wouldn't be worth it. For others, you might be able to replace some of the oil without too noticeable of a difference.

I recently watched Forks Over Knives and I want to replace fat entirely. I was looking at the recipe for pancakes and Mexican hot chocolate cookies. I have heard that you can use applesauce, but I don't know if it work in either of these. Any thoughts or suggestions would be great!

For pancakes, you can just leave any fat out (and use a very good non-stick pan
For cakey things, I often swap out fat for mushy banana. It makes them very moist!

well, in pancakes you could definitely sub applesauce since it's just a little bit. In cookies, if you replace all the fat, you end up with really soft/cakey things and aren't really worth making in my opinion. It works out much better in cakes and muffins, but even there, it helps to leave a few tablespoons of oil to keep from getting a gummy/rubbery texture. you should check out the forks over knives cookbook because isa wrote the dessert recipes and the ones i've tried are really good. they tend to use nut butters and other sources of fat deemed ok by the forks over knives people. http://www.theppk.com/2012/01/raspberry ... -brownies/and just as a side note, many health professionals do not agree with the anti-oil stance, so it might be worth to check out differing opinions such as this one from Ginny Messina who is a vegan registered dietitian and very knowledgeable http://www.theveganrd.com/2010/10/olive ... ocacy.html

I agree that it is easier to use an existing recipe than trying to modify your own. I wasn't aware that Forks over Knives had a fat free stance but it isn't something I personally agree with. Another place to look for recipes would be http://blog.fatfreevegan.com . There are a lot of good recipes, not necessary fat free but generally are low fat. also i know you specifically said baking but if you are looking to cut down on oil in regular cooking, Isa's cookbook called Appetite for Reduction is technically a "low fat" cookbook. i never think of it this way becuase everything in it is so amazingly delicious.
their is very little use of oil in it and it has the nutritional facts for each recipe.
plus like i said everything in the book is just stoopidly delicious for real.
im not just kissing asparagus because this is her message board it's seriously my favorite vegan cookbook.
