Not to beat a dead horse, but OMG the Smoky Soy Curls are amazing! Just tried them for the first time...actually, it was my first time ever eating soy curls, period. I'm so glad I used this recipe to test them out! We made wraps out of them and it couldn't have been simpler or more delicious. Love.

I think I've had trouble getting into this book because so many dishes aren't complete meals, and I cook a lot of one-pot meals. I LOVE LOVE the apple coffee cake though. And that smokey mac & cheese is nuts.

If you like one pot meals, I love the Jambalaya from this book. It makes a lot (enough to feed six or eight) and leftovers freeze well.
I'm just steaming a batch of breakfast sausages from this book. I've folded each one in a corn husk and loosely wrapped the lot in a tea towel and put them in the steamer that way (I saw someone else steams seitan in a tea towel here and I decided to try that because I'm not mad about steaming things in foil.). I'll see how it works out. Also, I was a bit scant on my vital wheat gluten measure so I hope things work out with these little changes I've made, never having made this particular recipe before. I love having sausages on hand so I can make biscuits and gravy because I love to put sausage in the gravy.

The sausages worked fine! I haven't used them in anything yet (they're sort of earmarked for biscuits and gravy because I've been having mad cravings for that lately) but texturally they're fine and taste wise, although I've only eaten them raw, they taste fine. I'll try them in a recipe soon and find out for sure.

I messed with the chicken style roast on Sunday because the rest of the family were having roast beef. So I added some bisto powder to the water and used lamb seasoning instead of poultry. Aside from needing a wee bit more salt, it was good. That recipe is so easy and the texture is great!
I had loads of leftovers so I made the irish stew recipe from AFR with it and it's great.

I make the chili with the sweet cornbread every few weeks - really good pair! The cornbread is super simple and perfect for the cast iron skillet.

I made the apple spice cake tweaked with applesauce for half the oil and some quinoa flour mixed in. I love it and can't wait for another piece for breakfast.
