Can yeast bread recipes be doubled? does that usually work with yeast stuff? I never really stray from yeast bread recipes at all. I'm thinking about making this recipe, but I want to make a loaf for me and a loaf for a friend http://www.kingarthurflour.com/recipes/ ... oaf-recipe

Yes, of course. I often double recipes because I freeze a lot of bread. For easier handling, you can mix all the ingredients, and divide the dough in half, let rise in two seperate bowls, etc.

I double bread recipes all the time, but usually less than double the yeast. (I just let it rise for longer.) Granted, I mostly bake no-knead breads now so it's not really an issue since the rise is so long for those breads.

I double recipes like this with no issues. I wouldn't double the salt necessarily - my standard no knead recipe is about 7 cups of flour to 1 tablespoon salt.

I also double bread recipes pretty routinely; the only thing I might change is to not quite double the amount of salt. Otherwise, easy peasy!

I almost never use as much salt as bread recipes call for anyway.

In one bread recipe I made before it said not to double the yeast if doubling the recipe, so you guys aways double the yeast?

I often just make two batches - it's easier for my mixer to handle (or me, if I'm kneading by hand). But as Mihl suggested, you can just divide a double batch in two for easier handling.

I like to use less yeast than most recipes call for, so I usually don't double. If I decrease the yeast I increase the time for the second rise.

I've cut pizza dough recipes in half and they've been fine, so I imagine it would work both ways.
