Love this thread and all the delicious inspiration !

Last night I made a Thanksgiving bowl after coming home from a 17 hour work day. We had an unexpected blizzard with -40 C temps and I had to stay at work until another network manager could make it in. I was simultaneously frozen, exhausted and starving.

Thanksgiving bowl assembly: calrose rice; Desdemona’s sage-thyme gravy, roasted chickpeas with diced roasted potatoes, carrots and parsnips, all topped with spiced cranberries leftover from my Christmas sauces.

30 Bowls for Healthy Winter Eating

I wouldn't consider all of those "bowls" but lots of good ideas on there.

What I had last night: barley, sauteed brussels sprouts, spinach, black beans & cashews with a 'nutritional yeast' sauce. (Nooch, garlic powder, onion powder, almond milk, tiny bit of cumin & black pepper, tiny bit of liquid smoke & tapioca starch)

Delicious!! But I love the earthy/homey taste of barley & brussels sprouts.

Random bowl that I just had for lunch: brown basmati, seitan (that fake duck in a can that's been sitting on the shelf for over a year), purple sauerkraut, grated carrot, and PB/miso sauce (peanut butter, yellow miso, rice vinegar, agave, hemp oil, hot sauce). Really tasty!

Yesterday's bowl was white rice (out of brown), roasted broccoli, lentils, nuked potato, and a quick coconut milk curry sauce. I felt like a cheater using curry powder in my sauce.

Tonight's five-minute bowl: Two minute noodles, vine-ripened cherry tomatoes, carrot slices, a big handful of arugula, half an avocado, some store-bought, pre-spiced, pre-fried tofu right out of the package (from the Albert Heijn, in case anyone in NL is curious), and several dollops of Isa's Red Hot Tahini sauce. The avocado wasn't as ripe as it could have been, but other than that, a nice, quick, and satisfying bowl.

-Ancho Lentil taco filling
-a bit of Daiya
-cabbage/slaw mix
-pico de gallo
-quick sauce made from Tapito and Sour Cream
-and the BEST part: an avacado a co-worker gave me from his avacado tree!

I had an amazing bowl of leftovers for lunch, consisting of steamed green beans, carrots and peas, roasted sweet potato, cauliflower cheeze and sag paneer. I was stuffed!

What a glorious thread - so many great ideas! I can't believe I haven't seen it before today.

I love bowls and need to remind myself to make them more often. There is something so satisfying both with the food, and sitting with the bowl and eating.

I think I'll start with the Mexican Millet inspired bowl and the Hoppin John bowl. I've been meaning to make the Mexican Millet from Vcon and I've never had black-eyed peas but it looks so good!

Burrito bowl because I ran out of tortillas for leftovers - Spanish rice, roasted cauliflower, black beans, refried beans, olives, salsa verde, and guacamole with a few tortilla chips crushed on top.

I have curry sauce, quinoa and rice. I was thinking of adding in chickpeas. What else should I add (that isn't expensive) to it to make it a tasty bowl?
