I want another artichoke so bad, but I think I'll use the lemony-cayenne-earth balance sauce Jay made to do something rich with the spaghetti squash that I've been ignoring for too long. I finally have a two-day weekend, so I'm also going to make soy curls piccata over steamed chard and mashed potatoes (AFR modification).

I have no idea. I'm really hungry after not having eaten properly in three days, but my stomach ache is really bad. Can you guys give me some tips? I've tried plain toast and pasta, which worked ok but I'm out of it now. I'm too tired to make a proper meal, otherwise I would try a soup or something.

Not much that seems appealing at the moment, I have fruit and stuff but I guess that would only upset the stomach even more. Same with beans and lentils. Other than that, I have rice, soy and oat milk, oats, different kinds of flours, avocados, nuts, tofu, homemade yoghurt.

Would eating some yogurt help your stomach, with the beneficial bacteria in it? Maybe try it with some vanilla and sweetener if you have them.
We're having cottage pie - seitan mince, carrots, peas, corn, green beans, onions, garlic and bisto under potato and broccoli mash. I've also made a tray of chickpea blondies.

GOOD. http://veganeatsandtreats.blogspot.com/ ... palak.htmlI really want to try this recipe, it looks great. I wonder if it'd work with frozen spinach? And if so how much? I have a tiny food budget this month & a whole load of lentils & frozen spinach! I think it would totally work. I would just add what you estimate might be that amount of spinach fresh...and air on the side of more since frozen spinach is packed down but also watery. Thank you! I halved the recipe, used 200g of frozen spinach & didn't use all of the water from the lentils. It was awesome, especially with the lime.

I made soup using one of those Bob's Red Mill soup starter things and added in carrots, celery, onion, garlic, a few collard greens, and some thyme. It was so simple, but is tasty and comforting and filling. Very good no-think dinner.
Last night I made Snobby Joes (vcon) for the first time ever and am kicking myself for not making it sooner. It's going to be a regular around here, for sure.

If you have white rice, even better.

I made the VEW steamed Chinese seitan filled buns. They are delightful. I've never had anything like this before. I also made a pot of hot and sour soup loosely based on the v'con recipe, but using up the veggies I had in my fridge.

Exciting change of plans! Went out for girl's night (my two best work friends and I have made this a thing) at a new Neapolitan wood-fired pizza place and had a cheese-less (they have Daiya, but that is not my thing) pizza with fresh garlic, oyster mushrooms, roasted Brussels sprouts, and pepperoncinis. It was surprisingly the best pizza I've had in ages. Perfect crust, and my favourite toppings.

The amount of artisan vegan cheeses in my fridge (fresh mozzarella, smokey cheddar, cheddar beer, and the end of butternut queso) are calling for mac & cheese. I think I'll go stove-top style with a side of collards and roasted red beet.
