My second time making V'con Eggplant Rollatini for my brisket-eating, paddle-ball-playing, vegan-fearing, Jewish grandfather. He raves about this dish to everyone.

Those are so beautiful!
The eggplant rollatini is one of my favorite "shut up, omni!" recipes. Works beautifully. Yours are so much more attractive than mine, though, I must say. Gorgeous!

For those who are planning to make this: When I make the 'tinis, I bake the eggplant (according to the directions in V'con), but i use cashew ricotta. For most omnis, the creaminess and the flavor of the cashew ricotta is more appealing than straight tofu ricotta.

These are so pretty! Mine never turn out so nice looking, but they sure are delicious. Sometimes i get lazy and just layer all the ingredients like lasagna.
