I had a huge steamed artichoke with a thrown-together garlic/lemon/EB/chili/fresh mint chutney dipping sauce, and tofu puffs with more of the mint chutney. That shiitake is good (from Vegan Indian Cooking). I was going to do a grain as well but that was all my appetite could handle.

Vegan Diner chili with some Rio Zape beans from Rancho Gordo beans that I cooked up this morning. Those beans are so good! i could eat them plain, without salt or anything. I really need to cook beans from dried more often, especially since I'm home all the time.

Giant salad with mixed greens, sunflower seeds, almonds, green beans, tomatoes, red and green peppers, mushrooms, and miso-tahini dressing. So much fiber.

Arabian Lentil and Rice Soup from AFR. I've made it before, but this time it was SOOOO good. It was nice last time, but this time my soup-hating partner actually said "this is really good!" He never mentions how good something is. Ever. Success!

that salt-n-pepper tofu recipe plus jasmine rice and sauteed baby bok choy from VCON, a household favorite. I'll probably cook up some frozen veg dumplings as a starter too.

My partner wanted to experiment with bread making today and wanted to riff off of a hummus sandwich a well-known bar makes. Ours had the homemade pita bread, arugula, watercress, avocado, English cucumber, and the shabby sheikh hummus from AFR, topped with a jalapeno-lime vinaigrette recipe my partner found on the intarwebz.

He threw the whole jalapenos into the blender (2!), seeds and all, so it was quite spicy!

Apricot baked apples from Supermarket Vegan are in the oven now. I'm looking forward to them. There are a lot of fruit-based recipes in that book that seem like they'd be nice when you have a sweet tooth, but want to keep things reasonably healthy.

Curried tofu pot pie. Not bad! Would've been better if I could eat veggies that weren't mush, and asparagus turned out to be a bad choice of veggie to put in, but I will still love the leftovers. Instead of crust I made a massive biscuit and plopped that on top.

We had a big barbecue lunch, so I'm eating the leftover salad that we brought home for dinner. But it's the mango coconut rice salad from Plenty, which I love, so I'm pretty pleased about it (especially in this gross hot weather). I'm also defrosting some apple cake from the freezer for dessert.

I made a fantastic pizza topped with sundried tomato pesto (instead of sauce), seitan pepperoni, mushrooms, red onion and mozzarella + sharp cheddar from AVC.

I have a ball of dough left, so for tomorrow I'm thinking a pizza with black beans, pineapple, bbq sauce, avocado and caramelized onion + cheeses. Maybe I'll throw on some pepperoni on that one too, because it was so good.

I've been on a clean-out-the-fridge mission and made what ended up being a late night dinner of jasmine rice, slowly baked tempeh marinated in white wine, garlic, vegetable broth, soy sauce, thyme, maple syrup and apple cider vinegar, sesame sautéed bok choi and baked sweet potato which was such a nice addition since I so rarely buy it.

I had to look that up, but it sounds pretty good, especially with caramelized onions. A cheap meal to put together I reckon too.

I'm having sausage casserole tonight, (Linda McCartney's sausages, peppers, mushrooms and some packet spice mix thingy and extra smoked paprika!) With greens, and maybe a potato.
