i'm not 100% on board with it, but i have cut out white flour and rice. i eat a lot of beans over greens. right now i'm on vacation and having pasta and things that i don't normally even have in the house, and i feel like crepe.
i know from experience that i can only do this for so long, though, as the bean density seems to just get to be too much- today, i'm having bean enchiladas for breakfast. lunch will be beans. dinner: beans and greens.

I'm doing it since last week - not the strict 6 weeks plan (I drink one cup of coffee per day) and I ate crispy, yummy buns on the weekend.... but others than that, I'm pretty committed. Cut out most of the salt, all of the oils. Let's see how it goes!

I'm in too! Except for the one cup of coffee as well! I did briefly wander off course last night, but the extent of that was 4 taco shells and a tiny bit of tvp, so not so bad.

I think he has some recipies with TVP doesn't he? I think I need to re-read the book because I didn't realize that one cuppa in the morning was off the plan!

I am always amused to see that I started this thread, since I have never followed this diet. I like the idea, it's just too strict for me.

annasrobbie I don't know! I bought the "Disease Proof Your kids" book of his and there's forking steak and chicken and eggs in some of the recipes - I'm so ticked, it's a good thing I bought E2L used for $4 to balance that out.

Invictus, I have threads like that too :D You're just so happily non-deployed now that it's all better.

So, I just reread this thread, and despite the fact that every year I start in the spring and crepe out again, I am on board again (WITH ADDED SALT!)

(I should say- i stopped running due to OMFGWORKOUTOFCONTROL, and between that and making beer I have gained about 10 pounds and my clothes aren't fitting. Running is not going to happen again for a while, although I am going to try to make an effort towards strength exercises, so I need to do something to try to contain the damage here.)

Over the last six months we all have been transitioning to all-whole-grain carbs (pasta and bread) so that is a plus.

hey, it's been a few days and I'm still alive!! Kale in the garden seems to be a big motivator.

I even lived through a lunch at a chinese restaurant yesterday. I thought to myself today, you know, I have been almost GF and haven't even thought about it. let's see how the weekend goes.

Still funny to me, a year and a half later!

Having said that, I have (very) recently started to eat closer to this style.

I've been doing ETL about 90% of the time for about 3 years now and I have to say I love it. If I don't have any leafy greens I miss it. Been making Bryanna Clark Grogan's beans in the oven and just love the simplicity of it. Saves a lot of time (and money) and I can make a whole bunch at the time and freeze some. That way i always have something on hand if I'm in a rush.

I call myself the salad queen now:) I make a huge salad for myself every night and put everything but the kitchen sink in it. My fave right now is cutting the kernels of a peaches and cream corn and adding it to the salad. So sweet and juicy. And of course massaged kale. My garden has been producing lots of greens including kale and I'm saving a ton of cash. Love making different salad dressings in my vitamix and have recently started to make my own fruit vinegars in it. Much cheaper then store bought and no added sugar either. My last batch, strawberry and white balsamic was so good I ate it with a spoon.

It is true that it takes a while to adjust ones taste buds but if I eat anything with oil it gives me a weird mouthfeel that I dislike now. I use a lot less salt too and now prefer the clean taste of plain food since my taste buds are much more sensitive than before. I reserve pie and cupcakes for special occasions and they taste so much better now since I don't eat them as often anymore.

i made this yesterday (with major tweaks, using sprouted lentils and brown rice okayu instead of rice flour, frying in a nonstick with almost no oil).

it was PHENOMENAL. and it was made of sprouts and about 1T of brown rice.

I also had my first cheat yesterday, and felt SO sick. It was the first time I had had any gluten all week, so I wonder what is up with that.

so still just me, huh? I went through a rough month or so of work and am back in this again (after our thanksgiving observation on sunday).
still good. trying to get everyone else eating better but they just aren't on it.

I did this for a few months, but now that it's winter here, I really just don't feel like eating all those big salads/large amounts of (raw) veggies as much as I did when the temperature was a bit higher. Then it just came more natural/effortless to me, and now I’d kind of have to force myself to eat that way...
But I would really like to return to this (or at least for a large percentage of my day/eats) when I’m able to motivate myself enough, because I really did feel great when I was eating this way. It also ‘tought’ me a few healthy habits which I try to maintain, even now I’m not following the plan, like adding fruits and/or veggies to every single meal and snack, learning new ways to be able to cook delicious meals, and make salad dressing and sauces without oil.

Actually, I could really use a boost when it comes to my health habits, because I've gradually become more leniant when it comes to eating healthily, and losing a bit of weight would also definitely be a nice bonus, so I’m hoping that posting this might be the extra little push that I need to return to this way of eating, haha.

She blogs what she eats everyday on the Eat To Live program.
I've only looked at a few of her days, but I really like the nice pictures of all the fresh and vibrantly coloured food, inspire me to (want to) eat the same way...
