I've been making quite a lot of vegan versions of old favorite pregan foods.

A variation on the Vegetarian Times Almond Feta

Moroccan couscous and red cabbage salad with the cubed Almond Feta

Artisan Vegan Brie

Deviled eggs (I have always disliked boiled eggs, but these make my partner jump up and down with joy)

God yes! I was showing your website to a colleague of mine who's doing the vegan challenge in February and he was totally drooling over your almond cheese! And reading the recipe, I'm dying to give it a go too! (Although will probably wait till I'm in my new kitchen.)

So cool that your coworker is doing the vegan challenge. I really like what they've done with the program. It seems quite successful already, with over 1300 participants. I hope he has a great time and gets lots of veg-inspiration.

What is your variation on the almond feta? That is my go to cheese, but clearly you did something different to get that beautiful crust.

Haha, I baked it on 200 Celsius (= 400 F) instead of 200 Fahrenheit. It was kinda accidental, but the cheese turned out pretty good.

Thanks! Coincidentally, that's what we're having for dinner, except I didn't bake and at all and mixed in dried herbs so it's more of a cheese spread. I love that cheese.

I used a lot less salt than called for and had a set of tiny dipping bowls as molds for the eggs.
