Probably just some leftover vegetable barley soup from the freezer, steamed frozen veggies, and roasted brussel sprouts. I really need to go shopping.

We ended up having crispy salt and pepper tofu sprinkled with rice vinegar and red pepper flakes, plus kimchi and rice. It was really good and satisfying.

Tonight I'm making some pistachio-"ricotta," basil, and spinach stuffed manicotti baked in pomodoro sauce and sprinkled with some hazelnut-"parmesean." On the side, some broccolini sauteed in olive oil, garlic, and red chili flakes. And for dessert, some white chocolate mousse topped with strawberries.
The pistachio ricotta is in the blender right now. :) Yum...

I'm having the Tomato-Rice Soup with Roasted Garlic from V'con. Plus roasted brussel sprouts, sweet potato chunks, and red bell pepper.

Spent the day making VWAV Knishes, and now I've finally used up my 10lb bag of potatoes that I bought in early September.

Instead of cooking dinner at home, I went to a Mediterranean restaurant for hummus, tahini and babaganoush.

We also had curry tonight...basically, I made the VWAV Chickpea-Spinach Curry with less spinach and added cauliflower, with brown basmati rice on the side.

We had Veganomicon Chickpea Cutlets with Mustard Sauce, steamed kale and cherry tomatoes, and baked acorn squash with brown sugar, EB, and pepper. And Oatmeal Cake for dessert. This unemployment thing is working to my benefit, in the kitchen at least.

Found some (vegan) Halloween soup at Sainsbury's yesterday! It's called witches brew and is made with pureed pumpkin and beans. SO GOOD! I might have it for dinner again tonight.

Since I had the salad yesterday, today I'll have the last potato spinach square with something on the side. Maybe a chickpea cutlet? Or tofu again? Hard.

I have been eating VV orange mojo tofu with brussel sprouts tonight. I never thought I would like brussels as they have been boiled to deathly grossness at ever family xmas dinner ever... but who knew roasting them the V'con way would make me love them so?!

I ordered in some pizza, because I've had a really long week and I have no energy to cook and no social interaction left to go grocery shopping for something frozen that I can heat up. So, pizza with red onions, tomatoes, and roasted red peppers. I ordered it without cheese, and was kind of thinking about adding some Daiya, since I've got a bag in my freezer, but, really, no energy for even that.
