So I love nut butters but other than peanut and almond it's hard to find them around here and if you do, they are expensive. Having a Vitamix I finally tried to make some for Xmas. I made: Walnut butter - too bitter, need to try and skin them or blanch them first maybe Pecan candied ginger - AWESOME Rum & Raisin peanut butter - very good but need to work on the recipe a bit, wasn't as flavourful as I liked. Peanut M&Ms - didn't eat it myself because of the M&Ms, but it got quite hard. Didn't get any feedback
on nuts.com they have cherry vanilla peanut butter, chipotle chile peanut, raspberry peanut, caramel peanut, and banana peanut. But they have all sorts of crepe in them and shipping charges would make them very expensive.
Gimme some ideas for awesome nut butters.

I made a walnut butter with cinnamon and a little sweetener for my mom's birthday. Tasted like a dream, not bitter at all.
I also love roasted pumpkin seed butter and sunflower-vanilla butter (I read a blog where someone made this for their daughter, mixed in some pink food color and called it 'princess butter', cute and delicious!).

I think pistachio butter would be great. And of course hazelnut chocolate. Macadamia sounds good too.

i've seen maple cashew butter, but i've never bought it, because it's expensive and i think i'd eat it like pudding right out of the jar.

these are pretty obvious, but almond + maple and hazelnut + chocolate are both awesome. also seconding the idea for pistachio butter!
macadamia butter is supposedly delicious, but I've never had it.

I make walnut butter all the time and it isn't bitter. Maybe you just had some rancid walnuts? Tahini and sunflower butter work out well too. I hadn't thought of mixing in seasonings other than salt - I'll give that a try!

How about something like, blueberry vanilla cashew butter or maple cinnamon raisin peanut butter? I like the idea of the chipotle one.

I did a combo walnut/cashew butter once. The cashews cut the bitterness a little. I do think it depends on your walnuts - some are more bitter than others. I added cinnamon and it was super good.

I love macadamia butter. It's a little runny, but spreads okay if kept in the fridge.

What about a date, coconut almond butter? I also wonder about just blending seasoned nuts - like maple glazed cashews or something - would that make for a good nut butter or just be a waste of good nuts?

I love pistachio nut butter. If you don't take the skins off it ends up a weird brownish color, but taking the skins off is so much work that I just can't.
I also sometimes just buy roasted mixed nuts and blend those up with a touch of salt. A smidge of coconut oil makes a nice addition, and because it's solid when cold, the nut butter won't separate when you refrigerate it.
