 Post subject: storing tofu after opening

what is an acceptable way to store tofu after you've opened it?

dinner tonight was fail after fail so we said fork this and are going out. i had already started pressing some tofu. i thought i should put it in tupperware and cover it with water. my husband just said to put it press and all into the fridge so i did that.
i figure we will probably use it sundayish???? is that ok to leave it like that?

The directions on my tofu say to store it covered in water and to change the water daily. I know you can press it in the tofu xpress in the fridge, but I'm not sure I'd leave it more than 24 hours that way (I totally tend to err on the side of caution, though.)

my husband seems to think keeping it in the press means its covered in water.
i mean i guess it sort of is......i think i might put it in tupperware

Well, yeah, it is covered in water. It would be the "change water daily" part that make me twitchy about just leaving it in an uncovered press for much longer than a day.

I've totally had that happen and stored already pressed/in process of pressing tofu in water in a new container before and it's been just fine used the next day or so. I don't know why storing it in a press makes me nervous, maybe I feel like the water provides a barrier for bacteria &c?

I've stopped storing tofu in water. It seems like the texture gets kind of weird. It seems counterproductive to add more water when I'm usually trying to squeeze all the water out before use. I always use it within a couple of days anyway, so I'm not too concerned about safety. I've never had a problem with tofu drying out, and I can't figure out how plain water would have any sort of antibacterial effect.

I can't find any official food safety info on storing out of water, so if you want to be on the safe side, go with the water route. You might need to press again before you use it, though.

I keep super firm tofu in water and it keeps for up to a week or so, with no change that I can see.

But...it is REALLY SUPER firm. I don't need to press at all.

I find that I don't cover it in water, I just put the left-over tofu in a shallow bit of water in a tupperware container and I change it each day if I don't use it. If I haven't used it within a few days, I'll usually throw it out. I don't know if I'm doing this properly but it seems to work okay for me! (with extra firm tofu)

i always store it in water, changing every day. i don't usually press my tofu though, it's usually already super-firm.

I often have large amounts of very firm tofu around as I buy 1.5kg packs of offcuts from the co-op.
I store the tofu covered with water, but I don't bother to change the water daily. I refresh the water when I remember - hopefully before the water gets cloudy and the tofu gets a bit slimy, which I think tends to happen after about 4-5 days. If the slime happens I give it a good rinse and it's still good. Beyond the slightly-slimy stage there is a nasty-yellow-stinky stage, then it's too late and I kick myself for cruelty to tofu.

I've found that storing it in water w/ a splash of vinegar prevents it from turning pink for at least a week. That's without refreshing the water. Haven't died yet.

I second the changing the water daily thing - the water does get pretty gross, pretty quickly, and it helps keep that "slimey" "yellow" taste out of it.
