I pureed an entire block of extra firm tofu with lemon juice, vanilla extract, and stevia, and called it pudding. And I ate all of it.

Tonight I had the Jambalaya from Veganomicon. I replaced the seitan with Andouille Sausages from Vegan Celebrations. It was awesome. Looking forward to leftovers tomorrow.

I made MBM's tempeh wings and some roasted veggies and really, I need to make that recipe more than once a year. It's so damn good. Especially with faux ranch made of vegenaise and ranch seasoning. Next time I'll try making some sort of blue cheese type dressing.

Sausage rolls! I made a ton for Boyfriend to eat while watching the Super Bowl but he filled up on salsa and cookies so we have a million left. I'm not complaining too much.

I had a soggy leftover burrito that is still giving me the dry-heaves when I think about it. Today I will marinate some garbanzo bean tempeh (I am fascinated!) and do a tempeh korma or vindaloo.

Actually I'm toying around with doing something macrobiotic-ish, so marinated tempeh steak, brown rice, pickled veggies, and flash fried shimeji mushrooms with a tiny bit of sake and tamari.

Yes, the latter.

Pesto bean bowl from Get It Ripe. I might have some tomato soup from the freezer alongside (cashew creem tomato soup, from same book) but then again, maybe not tonight because I haven't had a big appetite lately. I think the pesto bean bowl and tomato soup would be a tasty combo though for when I'm hungrier and I'm making the bean bowl as four servings (in the instructions she says 2 but that's too much food for two servings to me) but at four servings, it needs something else to round it out...
