Macaroni with this spicy cheese sauce (which is so awesome) and soy curl chorizo (from the breakfast veggie chorizo recipe in VWAV), with steamed broccoli and avocado.

Nacho, nacho time!

Assuming I make it to the store to buy all of the fixins, we're having nachos with the PPK cashew queso, guacamole, black beans, tofutti sour cream, salsa, black olives, and green onions. Maybe pickled jalapenos if there are some in the back of the fridge.

I had that this evening also. I love that recipe, it is so good. Served it with a side salad.

This sounds amazing, for a "thrown together" meal. Yum!

Gochujang-glazed chickpea tempeh (verdict: so much more interesting than soybean tempeh!) with sesame kale and quinoa. With vegan Crunchie bars for dessert. You heard that right.

Yesterday I had rice, chickpeas and cabbage that I threw in a skillet and covered in peanut sauce and sriacha. Loosely based on the tahini rice and beans in VYY. Also had an avocado. I could eat that tonight again but I have no more rice so I think I'll make sandwiches.

"fish" tacos - panko-breaded tofu, crunchy jalapeno lime slaw and some thrown-together tartar sauce in corn tortillas. And margaritas.

I made a big pot of slowcooker black beans in IPA, water, smoked salt, pepper, cumin and dried chiles that I'll be having with corn tortillas, rice and fixings for the rest of the week.

Homemade calzone with spinach, cashew ricotta, roasted roma tomatoes and pesto. And Boyfriend is making some kind of pineapple cocktail.

Tonight will have to be something quick, maybe pasta with esme's sauce, broccoli and tofu. But tomorrow I'll be making the chipotle seitan tacos from Viva Vegan! Haven't made those before.

White bean and roasted garlic soup, sauteed kale with lemon and roasted carrots and potatoes. This cold can go right to hell.

Quick Fix Vegan's Sicilian Stuffed Shells, served with baby broccoli.

I love those stuffed shells! They're so easy and flavorful! I love all tofu ricotta, but this one's special since it has ground walnuts and golden raisins in it, in addition to herbs and spices, etc.

Indeterminately asian noodle soup with semi-from scratch broth, rice noodles, and baby bok choy.

It started out as going to be pho broth. And ended up, well, not.

I made a nacho bowl with quinoa, shredded Romaine, queso, guacamole, more black beans and chips. Awesomesauce.

Reheating some frozen casoulette. That's about as much cooking as I can handle right now.

Of the leek & bean variety? If so, did you freeze with dumplings? How well does that work?

Kale and sweet potato pizza (this with the obvious substitution of daiya) and a few roasted brussels sprouts. Yum!
