Macaroni with this spicy cheese sauce (which is so awesome) and soy curl chorizo (from the breakfast veggie chorizo recipe in VWAV), with steamed broccoli and avocado.

tofu scram with kale and roasted red peppers on top of savory cornmeal waffles with red hot tahini sauce! i'm pretty excited, especially because this is what my sister helped me come up with when i said i didn't want to leave the house to get more groceries.

Nacho, nacho time!
Assuming I make it to the store to buy all of the fixins, we're having nachos with the PPK cashew queso, guacamole, black beans, tofutti sour cream, salsa, black olives, and green onions. Maybe pickled jalapenos if there are some in the back of the fridge.

Gochujang-glazed chickpea tempeh (verdict: so much more interesting than soybean tempeh!) with sesame kale and quinoa. With vegan Crunchie bars for dessert. You heard that right.

Yesterday I had rice, chickpeas and cabbage that I threw in a skillet and covered in peanut sauce and sriacha. Loosely based on the tahini rice and beans in VYY. Also had an avocado. I could eat that tonight again but I have no more rice so I think I'll make sandwiches.

I made a big pot of slowcooker black beans in IPA, water, smoked salt, pepper, cumin and dried chiles that I'll be having with corn tortillas, rice and fixings for the rest of the week.

Tonight will have to be something quick, maybe pasta with esme's sauce, broccoli and tofu. But tomorrow I'll be making the chipotle seitan tacos from Viva Vegan! Haven't made those before.

Quick Fix Vegan's Sicilian Stuffed Shells, served with baby broccoli.
I love those stuffed shells! They're so easy and flavorful! I love all tofu ricotta, but this one's special since it has ground walnuts and golden raisins in it, in addition to herbs and spices, etc.

It started out as going to be pho broth. And ended up, well, not.
