 Post subject: Suggestions for a craptonne of leftover rice?

I made rice pilaf with dinner the other night, and we have a bunch left over. The thing is that for some reason it turned out really sticky and gloppy, so while it tastes fine, it's not especially appealing "as itself." I have no idea why this happened; I used the same basmati rice cooked the same way for the same length of time as always. Anyway, I'm not about to toss it out unless no other choice remains, and am soliciting suggestions from our resident culinary genii (that would be you guys) for interesting uses to which gloppy leftover rice can be put. Aaaand GO!

Maybe I'm just not reading this right, but do you have a craptonne of just cooked rice leftover, or is it a craptonne of rice pilaf, all seasoned and so on?

Put it in soup (at the end to avoid it turning into glue paste)? Stir fry it?

The best recipe I've seen for left over rice is the Avgo(less)lemono by Elizavegan. Maybe you've heard of it?

Sorry for the lack of clarity; it's a craptonne of rice pilaf, all seasoned and so on. Some sort of loaf or croquettes or casseroley application would probably work best with the texture!

I'd make lentil soup and throw the rice in at the end so it doesn't get mushier than it already is.

beet burgers on the PPK blog call for 1 1/4 cups rice- I'm sure the extra seasoning would not hurt at all. I always freeze extra rice as I make this recipe a lot to use up all the beets I get in my produce box!

Excellent. This recipe is also super versatile. Last time I subbed white beans for the lentils, and 1/2 cup of vital wheat gluten for the breadcrumbs, and they were delicious.

Congee, especially if it's already gloppy. I think the goal with congee is to get it to disintegrate.

In this case, I say reheat and smother with BBQ sauce or salsa. I can eat almost anything with BBQ sauce or salsa on it.
