I have a friend getting married in April. The wedding reception is being professionally catered - vegetarian with vegan options - but they also want to put out their own light, snacky type stuff for when the guests first arrive, such as antipasto and cheese platters, that we prepare ourselves. We want to make 4 different dips, at least 2-3 vegan options, but perhaps all 4, and we're kind of hoping to make them colourful. So far we've thought of a cream cheese type dip with roasted garlic and herbs, maybe a broad bean and almond one, and it would be nice to have a red and a yellow dip too. Not beetroot though, since everyone will be wearing their finery.
Another consideration is that the dips need to be quick and easy to prepare ahead of time. I don't relish the idea of peeling roasted capsicums for 120 people, for example. Anyway, does anyone have any suggestions?

Sun dried tomato spread from Vcon. It's a beautiful red and super easy. For orange/yellow I love the chickpea cheese from Quick & Easy Low Cal Vegan Comfort Food.

You can make bruschetta using canned petit diced tomatos, its supper easy to make it tastes really good!!its my favorite quick dip

Sanctuary dip is a good one in the "creamy" category. For a red dip maybe spicy red lentil dip? Except that would be more pink than red, but close enough maybe...

I don't know about where you live, but near me, it's much cheaper to buy jarred roasted red peppers than fresh red peppers. and I also second that sundried tomato dip from vcon. It's really good! or you could do a roasted red pepper hummus. It'd still be red, but it'd be mostly chickpeas.

One of those dips, esp a bean one try fermenting it. It is as effortless as it is unique. Fermented hummus is awesome.
