Tonight's going to be a big salad with mixed greens, roasted and raw veggies, pumpkin seeds, almonds, and miso dressing.

BBQ chicken pizza! I found some soy curl-like things at the Asian market here (all different sizes and shapes) and rehydrated them before stewing/baking them in homemade BBQ sauce. They turned out pretty great. Can't wait to eat pizza tonight and catch up on Walking Dead!

I had a totally macrobiotic-style meal and though those often bore me, this one made me feel excellent as I've been eating a bit too much crepe lately. Brown rice with scallions and nori, steamed broccoli, kale, cauliflower, and peppers, peanut sauce and ponzu sauce, and really simply sauteed super-fresh tofu cubes.

Easy indian food: jarred sauce with left over veggies and some tofu, rice and packaged pakoras. I cannot find a lot of Indian spices here and love Indian food...So this is a easy solution.

Chick peas topped with shredded Cheezly, chips, and mini-sausage rolls - I'm trying to eat less processed foods, but I can't seem to do it all at once!

Dal makhani, rice, and sauteed collard greens with ginger and garlic. Haven't had it since I stopped eating dairy. Bliss!

I had a pretty meh banana smoothie, and now I have tomatoes in the oven roasting for pasta, but they're not going to be ready until after 9 o'clock. I'll probably keep snacking and then take the pasta to work for lunch tomorrow. :/

I was gonna make quinoa puttanesca from AFR, but not sure if I fancy that now. I might make mac n cheese instead.

I made a smoked tomato soup with Ethiopian spices, lots of garlic, delicata squash, and celeriac. I was afraid it would be too spicy for my mum/boyfriend but we all loved it.

I forgot to make pancakes yesterday, so might have to do it today instead. I'm thinking of crepes with creamy mushroom chicken (vegi-deli) filling, followed by crepes with lemon juice and castor sugar. Yes, that sounds good!

Chickpea piccata! I made it for the first time over caulipots with the bf the other night and we INHALED it (with a little help from his roommate), and I had wished for leftovers. So tonight I made it again and JEEZ it does not stop being delicious and amazing. I think I have a new go-to weeknight meal. So tasty!

Bonus: since it calls for wine, I then get to drink the rest of the wine!

Got home late, didn't have time to get to the shops for mushrooms, so had a Linda McCartney pie with mash and a mountain of steamed kale dressed with cold-pressed rapeseed oil and fresh lemon juice. And a fresh mango for dessert.
