So, maybe this is a non-issue, but I want to be as sensitive to people with Celiac's as possible, so I would like to first ask A) Is the amount of gluten in an extract dangerous? I know when distilled alcohol is used, the gluten is not an issue. The recipe is using 2 TBSPs.

B) Is Whole Foods' 365 Brand Organic Vanilla Extract gluten-free? I have no time to check with the company via email. I am trying to make a cake for the Whalentine's Bake Sale but don't want to wreck an otherwise gluten-free recipe with a tiny bit of vanilla. I also JUST bought vanilla without giving regard for this being an issue, but just realized now.

Finally, does anyone know if Ethanol is typically wheat-based? One of my imported extracts lists Ethanol instead of 'Distilled Alcohol' and such, so I don't know if this is safe either. Thank you for all your help.

Ethanol is pure alcohol. If distilled alcohol is not an issue, ethanol shouldn't be either.

I don't think most celiac's would venture into the world of bakesale purchases, because it is too darn risky. Probably the folks who want xgfx stuff are more like me, intolerant and sensitive.
