I've never made white cake as a vegan. I've made regular yellow cake and vanilla. But i need white cake for a top secret project coming up. I don't want to test out a bunch of recipes and in general i trust you guys opinions more than the rest of the internet. The main deal with this cake is that it's got to be as white as possible. So if you have any experience with this or a photo to share I'd love to hear from you.

But I've also found lots of recipes that are "white" but really come out yellow. I'd also prefer not to use ener-g or however you spell it.

Poopiebitch mentioned Bryanna's genoise in another thread and I've since made it a couple of times since. It's really good and turns out pretty white.

Yes, I love Bryanna's genoise! It is very, very similar to the one from My Vegan Kitchen, and I've made other recipes of his (such as the strawberry cake) and they turn out great, so I'm sure it is good as well!

Don't use regular vanilla extract. Use a clear vanilla extract, or use almond extract. Use the whitest sugar and flour you have.

I haven't had much success with vegan white cake. Usually it ends up more like any vanilla cake, since white cake tends to rely on eggs.

If you want it as white as possible maybe use rice milk or water for some of the liquid. I've noticed that soy milk seems to make it more yellow (it could just be the brand I use too).

if the other one doesn't work out the white cupcake recipe from the vegan lunchbox page is quite white as long as you use clear vanilla extract, some not-yellowy milk, and whatever oil you use is not super yellow. i think i would use coconut oil, actually, because it's totally white.

omg, you guys, thanks to this thread, i made 48 cupcakes with bryanna's genoise recipe.

mmmsmsmspfghgh! SO F***ing good! they weren't white, since i made the lemon and chocolate varieties, but seriously, freaking amazing recipe. i don't think i'll ever make another chocolate cake recipe.

what soymilk brand is whitish? i can only think of ricemilk as being a nice white color. also, where can you get a clear vanilla?

The TJ's unsweetened vanilla almond milk is delicious and super white. That's what I used in the genoise.

Wilton makes clear vanilla. Any store that carries their stuff (Michael's, JoAnn, etc.) should have it.

Another vote for Bryanna's cake, above. Just trying to think about ingredients that you might add that may make it yellow... obviously white flour (& white sugar, if you're subbing) would be best, and a white soy/rice milk, but I wonder what you'd use for vanilla - most we get over here are thick, dark brown liquids that would definitely discolour the whiteness! Does it have to be vanilla flavoured? Maybe vanilla soy milk (if it's white) might work?

Imitation vanilla isn't good IMO, and you can't get pure extract in the white variety. Mattomic might be onto something with the vanilla milk.

Oh yeah! I was going to make a polka dot cake for my bestie last year. I am going to make it soon because it's his birthday again next week. Seems like they happen every year. The pic of the cake above was for my fiance's kid.
