Hey guys! That is really awesome that they sell hemp fu in italy. I'm getting some coagulants soon and will see if they improve the crumbliness of the hemp/pump fu. They are usable without the coagulants though! Here's the extremely simple recipe.
Blend two cups shelled hemp (or pumpkin) seed with 4 cups of water for one minute at high speed. I scoop out the resulting foam at the top at this point thinking it could be starch but that's probably misguided. Next, partially cover a pot of the milk, crank the flame up and keep an eye on it as it gets ready to boil. Even before it actually boils, you'll start seeing curds forming. When it reaches a low boil, turn the heat down to med-low and boil the pumpkin milk for like four minutes max (stirring constantly to make sure it doesn't burn to the bottom of the pot), strain out the curds and press them together then let it cool in a mold. I press mine in a tofu xpress. Here's what the end result looks like (note this is pumpkin seed fu. Hemp seed tofu looks similar though) -
