Pizza night! I'm thinking either falafel pizza, or something Indian-ish (aloo gobi pizza?).

Veggie korma I made in the crockpot which I had never done in the crockpot and changed a few things and I was entirely disappointed in it, and didn't even want to eat. That very rarely happens - I will generally eat almost anything! I had a tiny bit and rounded out my evening with a cup of tea and a quarter of a bag of chocolate chips.

Get ready to be jealous. I went to a vegetarian (and vegan!) cooking class and we had a five-course meal including summer rolls, Thai gyoza, Tom Yam soup, gingered lemongrass mock beef with green beans, green curry with tofu and mock chicken, a delicious tofu, veggie, and vermicelli stir-fry, and deep fried banana for dessert. It was so fun! I really needed to decompress from work, and this was the ticket.

Love!!!

Soup out of a can.

I'm being very lazy with the food prep as I feel sick and the significant other is visiting friends on the other side of the country, so I don't feel the need to perform.

Falafel pizza happened! AFR falafels, herb roasted cauliflower, tomatoes, tabbouleh and garlicky tahini sauce. Highly recommended!

Mac daddy with broccoli. I could eat that every week. I have some leftover gimme lean sausage I could throw in there too... Thoughts? Would that be yucky or a good addition?

Do it! I haven't had gimme lean sausage specifically, but mac and cheese + sausage = yum.

Tonight I'm having leftover hoppin' john from the ppk blog, with avocado.

I had hoppin John for the first time last week. Avocado sounds delicious with it!

We got Ethiopian take-out last night (spicy lentils, garlicky spinach, sambusas, cabbage/potatoes/carrots...I'm not going to guess on remembering the authentic titles), and I over ordered on injera. So now I have two huge things of injera, so I'll be making some sort of weird and maybe delicious berbere stew with the veggies we have in the fridge: baby potatoes, celeriac, cilantro, kale; along with lentils.

That takeout sounds devine right about now.

The plan is pizza with dough from a local shop, red sauce, sauteed smokey seitan and red jalapeno, vegan cheese, basil and I hope we have a green somewhere....

I kinda spent almost all my food budget this month on baking supplies to make cookies to give away, but I somehow managed to scrounge a pretty nice meal together from my pantry. Fairway tricked me into buying a bunch of sour oranges by saying that they were pleasantly tart (they weren't. they were sour) and that they didn't have a lot of seeds (they did.) so I decided to use one in place of lemon in my cooking tonight. I ended up with orange rosemary brown rice (just used the zest. also added some white wine), tahini roasted chickpeas (tahini, orange juice, garlic, thyme, paprika, a sprinkle of cumin and water), and then garlicy orange string beans with almonds. And more tahini sauce on top. It was quite tasty.

Made an awesome salad from Engine 2 - just kale, avocado, lemon juice and salt. Tasty & filling.
