My neighbors recently gave me a huge box of canned vegetables. I don't usually use canned vegetables, and I don't particularly care for them plain. What do you guys do to use them up and dress them up?

What type of canned vegetables?

I think of canned vegetables as soggy and generally not good but I think soups are the general recommendations for canned vegetables.

Which canned vegetables?

Canned corn I would put in tacos.

Canned peas I would put in fried rice.

Canned green beans I would put in pasta salad.

Not sure what else you have.

I would also put canned carrots in fried rice. The thing about fried rice is that whatever veggies you put in it get kind of mushy anyway, so the fact that canned veg are inherently mushy doesn't matter so much.

canned corn can also go in chili and maybe a corn chowder. Canned green beans might be good in a vegetable stew.

Soup. The carrots and green beans could go in minestrone, and the corn could go into chowder or chili.

I would probably go for soup, stew or casserole type things. The carrots might be good for cheesy sauces that use cooked carrots.

You can also use the canned corn for some corn salsa/relish, since it's not going to be a problem if it's mushy in that application.

I like to dump canned veggies in my ramen noodles. Reminds me of childhood. But I always throw in some cubed, plain tofu too. And a shiitake ton of sriracha.

The green beans should work fine in a casserole. I used to put them in my macaroni and cheese when I was in high school.

The green beans and carrots you can make a yummy quick pickle out of and use for salad. Toss them in a jar with some vinegar, salt , water and whatever spices (I like about 60/40 vinegar to water). Then in the fridge for a couple days.
