I kinda spent almost all my food budget this month on baking supplies to make cookies to give away, but I somehow managed to scrounge a pretty nice meal together from my pantry. Fairway tricked me into buying a bunch of sour oranges by saying that they were pleasantly tart (they weren't. they were sour) and that they didn't have a lot of seeds (they did.) so I decided to use one in place of lemon in my cooking tonight. I ended up with orange rosemary brown rice (just used the zest. also added some white wine), tahini roasted chickpeas (tahini, orange juice, garlic, thyme, paprika, a sprinkle of cumin and water), and then garlicy orange string beans with almonds. And more tahini sauce on top. It was quite tasty.

Made an awesome salad from Engine 2 - just kale, avocado, lemon juice and salt. Tasty & filling.

I hope someone has already raved about the seitan piccata in Vcon. We do tofu dredged in brown rice flour for a gf variant. Seriously one my all-time favorite meals. Eating this really turned my mood around tonight.

Last night I made Mexican: sauteed mixed peppers (red and yellow bell, poblano, and jalapeno) with zucchini, marinated red cabbage and cucumber salad, soy curls simmered in chili tomatillo sauce, and reheated frozen refried red beans. Served it all with corn tortillas, hot pico de gallo, and avocado wedges.

The plan was to have a friend over for dinner and make her chickpea cutlets and roasted sweet potatoes, but she is sick and not coming so I guess I'll guilt myself into eating the leftover vegetable soup in the fridge...

A burrito bowl with brown rice, caramelized onions, zucchini, mushrooms, baby spinach, kidney beans and corn, topped with salsa and avocado. Every ingredient in this meal is something I was strongly averse to as a child and oh my god it's so good I want to cry.

Last night was great. Lemongrass Tofu Bah Mi with pickled carrots and the pickled onions from VEW. Lots of great herbs and a side of baby Yu Choy. Was perfect. Tonight I was just so tired it was somen noodles with tons of nooch. Such a difference in meals but both so wonderful.

I went swimming and I was famished to the point of not being able to hold a knife because I was so shaky, so it was necessary. I also ate some pickled green beans because they were there.

Something with the Field Roast Sausages I picked up yesterday. Never seen them here before - only on my travels to the States. Very excited. Will probably end up having some sort of breakfast or brunch for dinner with the sausages.
