it is supereasy. our mixer broke at work and i made the frosting the other day with just a hand whisk and had no lumps for about a minute of whisking. i just plopped it on some cupcakes and did a swirly peak with the back of a spoon and it held shape instantly. it's probably the easiest frosting i've ever done..and i might even like the taste better than buttercream.
