 Post subject: Buckwheat, what to do?

I accidentally bought some whole buckwheat instead of bulgur and I don't know what to do with it. So, ppk, any ideas?

I assume you mean buckwheat groats - not flour? You can cook it up like bulgar; it takes about the same amount of time and water. I think I usually use about 1-3/4 cups water per cup of buckwheat for 20-25 minutes.

I have a friend who soaks 1/4 cup buckwheat overnight and then tosses it in with her morning smoothie too. It blends up nicely.

Yep, they are groats. Would I be able to substitute it for bulgur? Does it taste similar? I wanted to make chili.
Another problem I have right now: I'm out of flour and can't afford to buy any, so I need flourless ideas.

Are they raw buckwheat groats, or roasted? I don't know about the roasted, but I know the raw is soft enough to chew. You could probably just blend it into flour and look up a gluten-free pancake recipe.

You can cook them and use them instead of oatmeal. If they are raw, I'd roast them a bit before cooking them. Gives them a nicer taste. They'll be firmer than oatmeal. You could also add them to a granola mix.

I'm reviving this thread because I have the same issue now. I bought a ton of buckwheat to make heating pads with, and now I have a lot left over. Eating it like oatmeal is even less appetizing than oatmeal itself.
So far I've been adding it to salads; it works really well with the thai peanut dressing in AFR.
Any more exciting ideas for places to stick the groats?

you can sprout it and dehydrate (or cook) it and it's like cereal. or make varnishkes. yums. or kasha knishes.

There's an awesome recipe in Get It Ripe for Blueberry Buckwheat Muffins, that uses soaked whole buckwheat groats, blended, instead of flour. I can't find it anywhere online though. If I can dig out my book tomorrow I can PM it to you if you want!
