I don't want to steal the spotlight from anyone, but I would like to show some pies that I helped make. If you would like, post pictures of our pies too!
The pumpkin pie with spelt crust. I had lots of pumpkin from fall residing in the freezer and it looked rather sad and neglected. It is topped with leftover cookie dough and crust extras in a Geometric Abstraction pattern (joke)

A blueberry lavender pie with a half whole wheat and half white flour crust:
A "Blaubeerekuchen mit Vanilleguss" (it's German). In English, I would call some-thing along the lines of blueberry custard pie. It has a bit of a cakey crust and is topped with a custard-esque mixture, then with blueberries. The original German recipe called for quark and sour cream in the custard. We used Tofutti and home-made soy yogurt (ours was more sour and agar-like than typical American Brands) along with other ingredients. The pudding/custard was very nice and not sour!
I think that this could also be made with other fruits, or nuts, instead of blueberries, such as peaches (Peaches and Cream!).
Today, I also found out that I luuvv Tofutti sour cream. I tasted some with a spoon; I think I could sit around and eat it by the spoonful! :o
I think I might add a little more of the custard mixture next time.
