 Post subject: Chocolate Chip cookie help

I'm looking for a chocolate chip cookie recipe that is soft and chewy. It CANNOT contain flax seeds! I'd prefer one using margarine, as I have a pack of EB stick I'd like to use. The recipe cannot have flax seeds because I am very allergic to them.

I have Vegan with a Vengeance but it doesn't say what type the cookie is (crisp, cake, or chewy). Any Other suggestions would be welcome.

In the past I used Alton Browns chewy chocolate chip cookie recipe but it contains 1 egg and 1 egg yolk. Link if you want to see it http://www.foodnetwork.com/recipes/alton-brown/the-chewy-recipe/index.html

The Vegan with a Vengeance cookies are soft and chewy. Give those a try!

I think one main difference between making chewy and crunchy cookies is the baking temperature and time. I grew up using the Mrs. Fields cookie book, and she bakes most of her cookies at 325F for 18-20 minutes or so. They were definitely chewy. I'm sure you could adapt this technique, just find good timing.

if you want a cakey cookie, use one that uses tofu as the egg replacer. (i posted this on vegweb long ago. http://vegweb.com/recipes/tofu-house-cookies)
