First I "steamed" some shredded cabbage in soy sauce in the microwave. Then I added leftover noodles, diced tofu, mirin, rice vinegar, and almond butter, and heated it all up. It was disappointing. I was almost done eating when I realized it needed sesame oil. It still wasn't that good. I should have added onion and ginger, but they sounded like to much work. I was very lazy making my dinner tonight and I'm sad and bitter that it didn't turn out yummy, so I'm posting in this thread! Don't try to throw me out!

Nachos with daiya, green onion, sriracha, and refried red kidney beans because I didn't have any other beans. Put lime juice and chipotle chili powder on the beans, though, and it turned out really good and oh dammit I just remembered that I have olives and avocados that I forgot to use :-/

Agreed. Last night I had way too many oven sweet potato fries, and one of my roomie's Mike's Hard Lemonades (aka nausea juice. . . it was a seasonal kind, blood orange or something, which tasted really good but made me feel really queasy/tired. No good.)

Creamed corn was on clearance at Target today, and I thought of this thread. I briefly considered buying a can to mix with oatmeal, but then I realized how gross that really sounded, so I passed on it.

Roasted cauliflower, collard greens and tofu with pita bread. Super simple with just soy sauce, pepper and olive oil on the tofu and a seasoned pepper blend and olive oil on the cauliflower. It was actually quite good!

Last night I made a giant salad and topped it with chickin strips and a version of the red hot tahini sauce. Simple, tasty, and made in under 10 minutes. Score.

yesterday i made english muffin pizzas. twice.

i also had chips 'n Trader Joe's chili corn salsa for dinner.

oh yeah, and neapolitan ice cream with an absolutely absurd amount of chocolate sprinkles.

Yesterday for lunch I looked in my refrigerator and realized I went nuts with the produce at Sam's Club. So I nuked brussel sprouts, broccoli, red cabbage to halfway cheat the cooking process, then dumped it into a skillet with tofu cubes, jamaican curry powder, garlic, and veggie broth. I realized it needed some fat or something, so I mixed in about 1 T of tahini. It actually worked, I was surprised. I'd make it again.

Beer and microwaved instant noodles with whatever veg happens to be in the freezer... I used to use a handful of tvp instead of the veg but my stomach can no longer handle that much soy protein. Bleh.

Frozen schnitzel (store bought), zapped for 3 minutes in the microwave, slapped between two pieces of brown bread with a healthy dollop of ketchup, mustard, and veganaise, and a handful of pickle slices. Made within the space of a commercial break. Hit the spot amazingly well.

Yesterday's lunch was susppsoed to be a burger but I was out of buns! So instead it was a microwaved Boca patty sandwiched between 2 of those flat hashbrown patties they sell at trader joes, with lots of ketchup and mustard. It was one of my best ideas yet.

Today's dinner will be a can of refried beans mixed with salsa and about a cup of spicy Wholy Guacamole on top.
