i made a version of the pumpkin cranberry scones from Vcon, subbing cranberries for chocolate chips! not very seasonal, but i had a leftover can of pumpkin puree that i'd never used over the holiday season. little did i know, i still have remnants of the CC Scone Curse upon me! i'd only made scones once before and it was a total disaster. this time, i made them somewhat successfully, but when i was tasting them at first i was like, "huh. the salt in the recipe is really prominent..." then i realized, "i didn't add surgar!!" it was especially embarrassing because i made them with my special man friend. i kinda fixed the problem by throwing a powdered sugar glaze on top. i least i'd subbed out the cranberries for chocolate chips!

northwestsourdough's sour rye. Didn't have a baking lid to cover the loaf during first 20 mins of baking. Hubby suggested the lid of our tagine and I used that. I ended up with a cone head bread but I think it was the best tasting bread I've ever made.

I made the pumpkin chocolate chip cupcakes from VCTOTW. I kind of made the icing way to runny, but I'm not really a frosting person and those cupcakes were so good you don't need it.

Made chocolate chip cookies today to pack away for our weekend camping trip. Also going to bake up a carrot cake with raisins, coconut, and pineapple, as well as a stromboli for our lunch.

In the past couple of weeks I made the chocolate love cake from Sticky Fingers' Sweets twice. I made it as cupcakes with vanilla frosting and I didn't even have a chance to grab one.

Feeling slighted, I made it again as a layer cake with chocolate frosting. My husband declared it the best chocolate cake he ever had. We ate way too much cake over the weekend.

I made the caramel apple cupcakes from Veganomicon but didn't have all the ingredients for the icing so used the caramel one from Chloe's desserts, the icing was a wee bit too sweet but overall they were pretty good.

The restaurant I bake for closed down for a couple of weeks to move, so I had some time away from the oven (and a camping trip to Asheville! Woo!). Anyway, they opened back up yesterday so I made them a triple chocolate cake, a piña colada cake, pumpkin whoopie pies, chocolate chip brownies, a key lime pie, and a cherry topped cheesecake.

They sold out of almost everything before the end of the day! I had to make another key lime pie and a dozen cherry limeade cupcakes just to get them through this evening. They said the cheesecake sold out before they even got to dinner yesterday, and people were disappointed it was gone because they wanted to take extra pieces home. That makes me pretty happy because it's my own recipe for cheesecake, and sometimes I get really anxious when it's not someone else's tried-and-true recipe, I worry that other people won't like it.

Back on the muffin train. Made gingerbread muffins from 150 Vegan Muffins. They are so wonderful...just ate one warm out of the oven. The tops got kind of caramelized, sugar crunchy (like creme brulee?), and I just...want to eat another one. Mustn't, though.

Right I have a plan.... I win the euromillions, I move to Memphis, invest in your business and then you feed me deliciousness every day.

I have chewy chocolate chip cookies from vegan diner on. I just took the first batch out. My obsession with following the recipe to the letter didn't serve me well. I went against my better judgement and didn't grease the paper because the recipe didn't state it and now they aren't coming off it right at all. Half the cookie is left behind on the paper.

There's a bake sale this weekend for World Wide Vegan Bake Sale, and I want to make some impressive things. Any suggestions? I'd like to steer clear of cupcakes because a) there are always a million cupcakes and b) I really despise making frosting. Other than that, I'm open to anything!

I even subbed a bit of the flour for wheat germ and you couldn't tell at all.

Things you can wrap individually are always popular. Jumbo cookie sandwiches, brownies, coffee cake squares. I'm planning on doing some bags of caramel corn and also some savories for ours, like maybe tomato rosemary scones and sausage rolls or pizza rolls.

Yum! The savory stuff goes so fast, because everyone is sugared out. We usually have spinach pie, socca pizzas and maybe savory muffins and they always sell really fast. Plus because it can pass for lunch, you can get a higher margin on it, in my experience :)
