Today I went to the Institute of Culinary Education in NYC to take a class called "Decadent Vegan Breakfast", taught by none other than Adam Sobel (of Cinnamon Snail fame). I apologize for the quality of the iPhone picture, but the food was definitely very very yummy!

Clockwise from bottom left, we have Bourbon Pecan Pancakes with Ginger Stout Syrup and Cardamom Butter, Maple Mustard Breakfast Seitan Strips and last but not least, Fried Dandelion Greens with Lemon Garlic Potatoes. The pancakes were the best pancakes I have ever had...and Adam is such a sweetheart!

yay that's awesome! i ate the pancakes at the truck once and they were sooooo good! What is the butter? is it something home made or something mixed in with earth balance?

The butter has no Earth Balance...it's home made. It has soy lecithin granules and xanthium gum, but other than that, it's all normal everyday ingredients. Would you like for me to PM the recipe to you?

I was looking at that all and thinking that cardamom butter sounds so amazing on those pancakes but I can't eat that cause it's butter. Then I remembered that I can eat it all cause this is the PPK and it's all vegan! Except of course, I can't really eat any of it because it is all just pictures in front of me and not real food, which is sad. But it looks like the plate lives up to the name Decadent, which is happy!

I loved his spin on making seitan. It was basically vital wheat gluten with ground up and creamed tofu folded in (plus various seasonings of course) and then shaped and fried.

Oh, we also made Vanilla Sesame milk to wash it all down. It was delicious.
