Sooooo, today is my birthday and I wanted something special, of course. ;) So I cooked up some baby lima beans (from dry beans) with rose' infused garlic, sea salt & cracked pepper. In the meantime, I soaked slices of baby eggplant in malbec, and layered it in a casserole with slices of roma tomatoes, nutritional yeast, and tomato paste thinned with malbec, sea salt, cracked pepper, and basil...then slow roasted it in a 300 degree oven all afternoon.
When all was done, I combined the two and served - SOOOOOOOOOOOOOOOOOOOOOOOO good!!!
