Air Transat served me an artichoke paella, which sounds nice, but it tasted like nothing. Nothing! And I couldn't even really stomach the rice part because it was so tasteless. So I had two crumpets with EB and marmite when I got home to soothe my confused and jet-lagged stomach.

I can't wait to cook again tomorrow!

Big bowl- aduki beans, BBQ sauce (v'con), pulled pork style jackfruit, broccoli, sourdough battered onion rings, brown Basmatti. A meal that got a little out of control- things kept asking to join in so I let them. It was huge.

Quick and lazy Asian style noodle salad: noodles, shredded carrots, red and green leaf lettuce, red bell pepper, cucumber, broccoli, green onions, and supper firm tofu cubes with miso onion dressing and golden mountain sauce. Yum.

The caterers at the wedding I was working were really flirty with me all night, and one of them even made me my own vegan salad/grilled veggies dish (impressive given the meatiness of the leftover provisions) with hazelnuts, flatbread, and roasted pattypan squash. Given that my coworkers were left to just slop mashed potatoes and fish on their plates, I feel like I kind of scored.

A throw-together pasta bake of sorts. I made tofu ricotta with a block of tofu that was sitting my fridge mocking me about my lack of dinner inspiration. I layered pasta sauce, ricotta, spinach, black olives, and uncooked whole wheat penne pasta in a glass baking dish, covered it with foil and baked it for about an hour. It turned out awesome and even the tiny toddler tyrant ate it without trying to work me for a peanut butter sammie instead.
