I think I'm going to make the pumpkin mac and cheese from the Oh She Glows blog. With broccoli if I can be bothered to go buy some.

mom bowl: i combined the two things i loved that my mom got right as a kid. pb & jelly (actually homemade berry chia jam & almond butter) with instant oatmeal, topped with sliced banana and a fruit & coco water-smoothie.

An entire bunch of broccoli rabe sauteed with a little olive oil, 3 cloves of garlic, and salt plus a handful of walnuts.

Fighting off a cold and my cravings totally change when I'm feeling this way!

A stew with pasta, broccoli, portabellos, ginger, pureed tomatoes, and lots of cilantro. Fuel for another 12+ hour nursing shift!

Leek, chard, garlic, and cashew cream soup. Ingredients brought to me by my CSA! I might even go crazy and make some jalapeno corn bread.

The tempeh wingz from Don't Eat Off the Sidewalk (the best), ye'abesha gomen collards (kittee's recipe) and steamed sweet potato. It was the best.

Southwest beyond meat taco for me, and the same in a bowl for Julialegume. I was worried about weird texture issues, but I have nothing to report. I've had weirded faux meats, for sure.

Day 4 of leftover beans/kale/bulgur. I have to eat this one more time tomorrow and then it'll finally be gone.
