I made the quinoa, spinach, roasted corn salad with candied peanuts from Viva Vegan (Yum!)

I'm making the portobello salad with chickpeas, avocado, red onion and I think it's a mustardy dressing from VCON tomorrow for later this week. I haven't tried this one before, but I love all the stuff in it so I figure it'll be full of win.

-Tortilla Soup
-Chickpea Quinoa Salad
-Unfried beans which will be in burritos
-Chocolate pudding pie (for dessert. not dinner!)
I just bought appetite for reduction and I want to make ALL THE FOOD:D

Rough ideas (since I didn't hit a farmers market this past weekend):
-Stir fry tonight with jasmine rice by Julialegume

Pasta twice already this week. (Sat/Sun - I've been doing my groceries Saturday mornings, so I start my dinners for the week that day!) Soooo..
-Mac'n'nooch with garlicky kale and tofu.
-Italian Wonderpot
-Korean Fusion Pizza (if I can find chickpea flour that's not in a huge bag so that I can make seitan for it.) It'll have kimchi, bulgogi from VEW with extra sauce for topping the pizza, tiny bits of pineapple, green onions, and whatever else sounds good. Maybe sesame spinach.
-Banh Mi night! The tofu scramble version, also from VEW.

For snacks and treats, we're making chocolate chip cookies and chocolate-matcha-swirl bread. And lots of fruit and veggies too.

I'm late, but I just started meal planning so here's this week;

Sunday- Lettuce wrap burgers and a spinach strawberry salad with candied walnuts and fresh raspberry vinaigrette. Tried the smokey bean burger recipe from Thug Kitchen. It was good.
Monday- Stir fry, with a sauce from FOK cookbook. YUM!
Tuesday- Baked potato soup.
Wednesday- $1 pasta night. Saw this idea on a blog as a money saving idea to just have spaghetti once a week with no sides. Costs less than $2 for noodles and sauce ingredients. I make sure to eat a huge salad for lunch. And if we have extra veg then I'll cook that to go with.
Thursday- Snobby joes, potato salad and broccoli. Made homemade burger buns for them.
Friday- Breakfast for dinner :)
Saturday- Matt cooks!

And for breakfasts;
Homemade banana almond granola (FOK) with fruit. And smoothies.

It's not Sunday, but I've been working all week and living on tea and toast, so I've just done the grocery shopping and tonight and tomorrow it's time to cook! Mainly things I can keep in the fridge and serve really quickly.

- mushroom and cashew pate and chili con queso (for snacks and sandwiches)
- soytan cutlets (probably mainly to eat cold with salad, as well as in sandwiches)
- spicy baked beans (there's brekky taken care of)
- broccoli and walnut salad
- coleslaw

I just bought some quinoa flour too, that I've never used before, and might try making some flat bread.

This weekend I will be making:

Chickpea toss (Garden of Vegan recipe to use up some leftover kalamata olives). Probably with some greens like broccoli
Po Boy sammiches from VCON with Vegan Diner's horseradish potato salad to serve alongside.
VwaV Veggie Burgers (to freeze, for a BBQ in a couple of weekends and just to have on hand for quick meals).
Black Bean, Mango and Quinoa salad from VCON

this week's gonna be an easy meal kinda week, here's what we've got planned:

- creamy polenta bowls with slow-roasted tomatoes, garlicky white beans, broccoli 'n toasted pine nuts
- frito pie (never had it and i found some generic fritos)
- spaghetti 'n beanballs
- grilled veggie burgers, asparagus and corn on the cob
- quinoa salad (with cucumbers, tomatoes, bell pepper, jalapenos, black beans & an agave-apple-cider-vinegar-lime juice dressing)

it is so hot, cooking this week means: if it is not done within 20 minutes - I will not bother...

monday: veggie burger patties, cheeze & shells and a kale salad
tuesday: curried zucchini & tofu over rice
wend: usual pan fried bbq plate
thurs: pizza with a salad (may change)
friday usual nachos

Last night we cooked dinner for the week and chopped up all our veggies for salad and stuff. I'm so stoked!

Mon/Tues: carrot & onion soup, french bread, salad w/ tahini dressing
Wed/Thurs: red lentil & cauliflower curry from V'con, brown rice, sauteed chard

Friday we're going out to dinner. Hopefully for dosas :)

This morning, I made Vegan Brunch bagels. Yum!

I'm also making all stuff from Quick Fix Vegetarian:

Chickpea ditali soup (another version of pasta e fagioli)
Roasted asparagus, quinoa and white bean salad.
Lemon pepper tofu wraps with lime hummus.

Quinoa Hummus Cassarole from Vive Le Vegan (Dreena Burton's)
Italian linguine with vegetables and seitan from American Vegan Kitchen (Tamasin Noyes)

Two quick weeknight faves as I didn't cook yesterday (had a busy weekend) so have to cook evenings for this week. So, time-saving and delicious things!

I am going out to eat for dinner Monday and Tuesday, which is something I never do considering I have fresh produce in the fridge. Ah well. The rest of my week looks like this:

-taco salad with all the fixings
-roasted lemon-rosemary potatoes, gardein turkey cutlets, steamed broccoli, kale and asparagus.
-grilled teriyaki tofu, snap pea salad with pistachios and cranberries, various steamed veggies
-bbq seitan sandwich wraps
-some sort of dhal despite the heat. perhaps with homemade paratha

I am planning to make this week (since the 'heat wave' will be over today) -

Isa's Chili Cashew Dosas with Spiced Apple Cider Chutney
from the same book - Potato Spinach Squares (although I have never seen Yukon Gold spuds here & MISS them!)
making the usual roasted bell peppers with tomatoes, onion, garlic to have with pasta / baked potatoes
will be having a stir fry to use the veg I have here with smoked tofu
AND I am going to make Isa's Cocoa Raspberry Muffins to take into work ...

Last night was double roasted beets, grilled tofu with a ginger-tahini marinade, brown rice & raw brocolli dipped in the leftover marinade. It was pretty good, I must say!

Tonight I am going to make Cumin Lime Black Bean Quinoa Salad, roasted squash and Tomato, Tempeh & Lettuce Sandwiches. Tomorrow I'm making Tomato Basil Cream Pasta, Side Salads and Zucchini Walnut Raisin Loaf w/ Cinnamon Struesel.

I haven't planned much after that! I am doing a cooking camp on Friday and I'm excited to introduce some vegan recipes to them!

I made the Tofu Po Boys again because I had some of the breading left over. This time I added the called-for pickles and it's delish! Also having with Vegan Diner's horseradish potato salad, which is my favorite potato salad.

Making the black eyed pea stew from Vegan Diner and some brown rice. Also will serve with some of the coleslaw left over from the Po Boy makins.

Wednesday: Chana masala & brown rice. (FINALLY trying from scratch)
Thursday: Snobby Hoes, as we like to call them. With roasted broccoli.
Friday-Sunday: Friend in town. Not sure yet.
Monday: Tamale Pie.

Breakfasts; blueberry muffins (happy healthy life), and granola (FOK).
Snacks; hummus, fruit.

Went grocery shopping earlier today and bought the fixins for:

Pasta Nicoise Salad (thanks to someone mentioning it from Vegan Planet, and I realized I've never tried this version) with marinated and grilled portabellos. I forgot to buy the salad greens to serve under but no biggie, though Nicoises usually feature some crunchy green lettuce so I might miss it.

Sweet Potato and Smokey Black Bean Salad from Dreena's latest (Let Them Eat Vegan, I think it is).

Probably a batch of Viva Vegan's red seitan to freeze--love to have that stuff on hand.

I went to the store today so the menus for the week are:

Pecan crusted seitan with maple mustard sauce, couscous, kale and bell pepper strips
Taco salad with black beans, salsa, avocado, scallions, crusted tortilla chips over romaine lettuce
Sesame noodles with tofu, broccoli
Edamame bowl with raw vegs on the side
Pasta con broccoli with chickpeas, leftover vegs.
