What are you doing with yours?
I really need to think of something to do with stuffing, but everything I'm finding online is really not what I'm looking for. I don't want to use it as actual stuffing because I'm tired of stuffing already.
So far I've made Shepherd's pie out of half of the leftover roast (froze the other half) and the gravy we weren't eating. I'm making baked goods out of the sweet potatoes. I still have collards, mashed potatoes, stuffing, macaroni and cranberry sauce.
The macaroni will probably be frozen and used for chili mac later on.
I was thinking about using stuffing in veggie burgers. Is that crazy? Has anybody done this?

u havent done stuffing in burgers, but it sounds like to would work to me. Just toss it in the food processor with some beans, nuts and veg and pulse. season and go. i basically use a leftover cooked grain and do this for burgers and we are happy with it. you can add some gluten if you want a firmer texture.
We just eat leftovers. made some 'bobbie' style sammiches- turkey substitute(bbq tofu in our case) stuffing and cranberry sauce on a sub roll. my husband will even add gravy (bleech). but mostly we just ate it, esp the stuffing. the only thing left now is the cranberry chutney, but its so good, we are addinga little to everything- had some with my tofu scramble and home fries for dineer tonight.

I had the best leftover sandwich ever earlier (yes, even better than the one at s'nice). It was a grilled tofurky, cranberry sauce, and brussel sprout sandwich with gravy on top... mmm. I should make a shepherd's pie with all the veggies I have, because somehow I ended up cooking a shit-ton in the crockpot with my tofurky this year.

I'm super jealous of the fact that you still have leftovers. Mine were gone by Friday at 3 pm.

we still have regretsgiving lasagna and then we made a tofurkey for dinner tonight, so we are still rolling in the leftovers. tomorrow i'm going to be gone for 12 hours (UGH!) so i am making myself a tofurkey and cranberry sandwich that will hopefully keep me full for a while!

I made half of my potato roll dough into a bread loaf specficially so I could make sandwiches. I have the last of the roast and green beans in my work lunch, but I still have several cups of roasted ginger sweet potatoes and stuffing, which I am also sick of. And half of a forking pumpkin pie. How do you recycle a pumpkin pie? Brian broke my soyatoo can and I don't want to eat it plain.

Joni's burger book had a recipe that used stuffing as an ingredient. I remember loving it, but I tested 2 years ago and I don't know the recipe. Maybe she will pop in and help?

I'm using my sweet potatoes for this bread recipe. And also using some for DEOTS cinnamon rolls. But I'm gonna attempt to make them into two bread loaves. Then I'm freezing them. The mashed potatoes and collards are turning into perogi. I froze the stuffing until I figure out what to do with it. Next year, I'm scaling way back. Making a ton of food is great in theory until you realize that stuffing is kinda hard to recycle.

I have stuffing mix that I didn't get around to preparing for Thanksgiving, and a big ol' seitan roast to use up. Here is what I'm thinking of doing.
Layers from bottom to top: stuffing seitan gravy mashed potatoes seitan more gravy stuffing

stuffing burgers sound like a delicious idea! i also just froze my leftover stuffing too, though. i figure it will make good comfort food when i'm sad and cold in a month or two.
i have a crepe ton of pumpkin puree to use up too, but i think i'm just going to make cookies and muffins whenever i know i'll be meeting up with a bunch of people and pawn them off on them - ha!

Mine are pretty simple: left over Field Roast, crescent rolls and that is it. Lunch with a salad tomorrow! :)

I have no idea what Im going to do with all the leftovers. I DO think that next year, everyone can go out to eat. So sick of people wanting all the forking thanksgiving food and not wanting to take any of the forking leftovers.
So over it....its like they barely appreciated it, and one cousin sat there and CRIED during the whole meal....
Yes, she's a grown woman.
Yes, I was able to check off the "awkward holiday moment(s)" box once again this year. :/

I never heard of bubble and squeak. I'm not the biggest stuffing fan and my mother in law refused to keep some. So I have a lot of stuffing.

Bubble and squeak is mashed potatoes and stuffing mixed up and then fried. Of course, there's lots of things you can put in it, and you'd have to bind it with a little oil and flour if it seems dry, but that's basically it! I love the stuff.

I've always wanted to make a vegan t-day leftovers pizza. Please, someone do this. Crust, gravy, dollops of mashed potatoes, sliced tofurkey, some cranberries, brussels, etc.
