I made the split pea soup from VWAV, but used whole yellow peas instead of split peas. Ate two big bowls for lunch, it's so good! And I don't even like soup!

I made the Cashew Creem Tomato Soup from Get It Ripe. I love this recipe. It's fast and I always have the ingredients on hand.

I made the red seitan from VV, roasted applesauce from VWAV, and using the seitan in mushroom seitan stroganoff from VWAV for tonight.

Today was an unusually recipe-laden day because I was home all day and made lunch for the next couple of days too.
I made Creamy Horseradish Dressing, Basic Baked Tempeh, Masala Baked Tofu, the sauteed collards (Gomen such and such), and a shiitake ton of steamed kale out of Appetite for Reduction.

Blackened tofu from Eat, Drink and Be Vegan (eating it right now and yummers) and a couscous pilaf with toasted pine nuts and parsley that I copied out from a magazine while I was waiting for my hairdresser to finish a client a few weeks ago.

Yesterday was a big cooking day. I made the blueberry bundles from Vive le Vegan, Joni's tofu salad, BBQ baked lentils from the internet (don't remember where), cool slaw from Appetite For Reduction(good but will be better today after it has had time to soften), and soft peanut butter chocolate chip cookies from The Vegan Cookie Connoisseur. Those cookies were so good I made my partner take the rest to band practice after I ate way too many.

I made classic pesto from VwaV and used it in the pesto pinwheels appetizer recipe from La Dolce Vegan to take to a potluck earlier this evenings. I used puff pastry and they were really yum and several people told me they thought they were delicious (this was a non-vegan event, so that was especially awesome).
I made spiced pita crisps to go with the lentils and rice with carmelized onions, and I'll make the lentils and rice tomorrow night.
Quinoa tabbouleh salad from Yellow Rose Recipes for lunches this week to eat with any leftover spiced pitas and the few leftover puff pastry pestos from the potluck. Yum.
Yesterday, I made the apple and walnut pudding from La Dolce Vegan for breakfast. It's a really delicious recipe, I used to make it all the time ages ago and it somehow slipped away from me and I rediscovered it yesterday morning. Reunited and it tastes so goooood. /cheesy 80s commercial jingle.

i made pumpkin french toast and then i turned VB scones into lembas bread, which i wrapped in pieces of parchment and attached little construction paper leaves to. i'm crazy.

VWAV curried split pea soup, VV pan-fried tempeh with sofrito, and no-knead bread dough to bake tomorrow. I can't wait for my apt to smell like delicious bread!

I made the scrambled tofu out of the front of Vegan Brunch. Later on I'll probably make some seitan o'greatness and maybe the sweetcorn chowder from VWAV.
