Does anyone have some good recipes for a bread machine? The cookbook that I have had tons of recipes that all call for eggs, powdered milk or honey.

Suggestions?

when it calls for powdered milk, i use soymilk instead of the water. for honey just use a liquid sweetener or sugar and check when mixing, you will probably need a tsp or 2 more liquid. for eggs, i have had good luck with flax eggs in some breads but not others. however, i find i generally don't go for breads with an eggy texture, i like a chewier bread.

have fun, veganizing bread recipes has been so easy and fun for me.

my fave, which i need to put in the bread machine tonight is as follows:

11 oz of water/soymilk (often do a mix of the two)
2 scant tbsp of sweetener
2 tbsp oil
1 3/4 tsp salt
4 cups of flour (i use 1/2 all purp and 1/2 ww, but you can do 3 ap and 1 ww or all ap if you want)
2 scant tsp yeast

put in machine in order given and cook on the basic setting. the first time, check and see if the liquid/flour ratio works for you and your machine, but this works for me, and its my go to for nights like tonight when we are going to need bread in the am and i need to set the machine on delay for hot bread in the am.

I'll have to try that. I mostly make pizza dough in mine since the kids want daiya cheese pizza once a week

we use dry soy milk powder instead of milk powder and then just the recipe that came with our machine
this is what we use to make white bread:
9-10 oz water
2 tbl oil or earth balance
2 tbl sugar
2 tbl pwdr soy milk
2 teas salt
3 cups bread flour
1 package active dry yeast (2 1/4 teaspoons)


at a certain point our machine beeps and you can add dried herbs or nuts to fancy it up a bit

I haven't made bread in my bread machine for a while. Mostly because I don't know how to store it without it going stale.

We are also soy milk powder users. I've not made anything that called for egg or honey but I would just use No-Egg (like EnerG) or agave respectively if I did find one. I also like swapping out the oil in our wholemeal bread for oil from a jar of sundried tomatoes and using smoked salt where it calls for salt.

I would suggest you start with veganising the recipes from the book that came with the machine as they do vary a lot - but the important thing is the quantity and what it does in the reaction. Read the trouble shooting section - temperature and humidity, quality of ingredients etc can make a huge difference but also it tells you what each thing does so it is easier to find replacments and subs.
