 Post subject: Chick Pea Skins?

I just skinned chick peas for the first time and it seems so wasteful to throw away that much edible stuff. Does anyone have suggestions for what to do with the peels? A recipe or even an untried idea? (I did search around a bit, but all the results were just recipes that recommend skinning chick peas rather than talking about what to do with the skins once off.)

If you're making vegetable stock, maybe you can throw those in?

Other than that, I think compost is your best bet.

You could blend them into whatever sauce you're using for the rest of the chickpeas as a thickener.

Off the top of my head...

Pat them dry, toss with olive oil and season with salt/pepper, paprika, cumin, coriander, etc. and put them on a baking sheet and roast in the oven. It won't take long and they will be crispy little seasoned things that will last about 2 seconds before you eat them all.

Or you can process them lightly and use to bulk up things like potato pancakes.

Ooh, that drying them in the oven idea sounds good....sprinkle in salads, baked potatoes, etc.

You could probably (??) use it like okara and put it in baked goods?

Oh my gosh, I am definitely going to dry in the oven. I do that with all my seeds so I don't know why I didn't think of it as the go-to-leftover-stuff option! Will report back on how they turn out.
