i want to try baking something for my partner for his birthday on friday; i'm thinking some sort of mini-cake or cupcake. i'd also like it to be relatively healthy (minimal sugar/fat/refined stuff).
ideas/favourite recipes?

Chocolate lower fat bundt from VCON?

Bundts are pretty and fancy looking and you'll be skipping the frosting that makes up so much of a cake's usual fat and sugar content.

ooh yeah, this is SO good! maybe make a strawberry or raspberry sauce to go with it!

in general though i feel like if you're baking for a special occasion you should just go for it with the fat and sugar and whatever, but this bundt does not in anyway taste "lower fat"

I third this suggestion, it's so yummy, and definitely doesn't taste lower fat. I tend to be of the camp that if you're going to have desert for a special occasion, it might as well be decadent, but that cake is seriously good.
