Hey foodies, help me out here! I don't normally experiment in the kitchen for the sake of my wallet and time. But I have an idea and I have no idea whether it will work or not. So I figured why not ask the PPK!

Savory and Sweet Pancake Casserole

The idea would be to take a box of pancake mix and prepare it like normal but instead of making pancakes I want to fill a casserole dish with the batter and then add in some breakfast sausage (pre-cooked) and daiya cheddar shreds. Bake and then cut into squares and top with maple syrup.

Sooooo, what say you? Is this possible or will I come out with a disaster and no breakfast to eat?

I totally think this will work! I did a quick little Google and it looks like there are some similar NV recipes out there.

I love this idea for a thread!

If you make the batter per regular directions, I would think it'd have to be pretty shallow in the baking pan to cook properly....more like bars than a cake height......but maybe that's what you're going for? You should check out the Bisquick website for tips on doing this (I think their low fat mix is vegan, anyway?).

Hmmmmm, Ok I use King Arthur gluten free pancake mix with oil and Ener-g egg replacer. It makes fabulous xgfx pancakes. Worried that it won't bake correctly. But I think I'm going to give it a try! If it fails I'll be out the money of the products but I can always fall back on oatmeal for breakfast that morning.

I saw some recipes online but none of them were quite what I would be trying. I'm just gonna go for it, will post pics and results! Thanks everyone.

if you're still up for ideas, this one is a very basic jumping off point w/o too many eggs:

I'm actually really tempted by the second one. It's getting cold here now, and tempeh bacon, sausage, and tofu scrable all baked on a pancake-y base layer....topped with syrup.....sounds like just the thing!

Maybe just make a small experimental batch the first time so you aren't out too much if it's gross and you have to toss it. I hate to waste food, but I also love to experiment. Usually it at least comes out ok, and worst case I can eat it but wouldn't make it again. Rarely there is a disaster that must be fed to the squirrels or composted. Often there is a great discovery and all are happy in my kitchen! I think kitchen experiments balances out on the win side, so I'm up for them. Your idea sounds good to me. I think you may be on to something.

I made it! It was ok, but needs work. I was being too lazy and didn't brown the sausage patties in a pan first. I just microwaved them and then cut them up into bits. Next I will properly cook them. I was also out of daiya so I have to try it with some cheddar mixed in next time.

It wasn't a failure though! And we gobbled it up!
