It's a pantry week, so it will be pretty boring and starchy.

Chocolate tahini quick bread
Blue corn muffins
Brown rice/corn/sesame crackers
Spaghetti with noochy tomato sauce
Spicy curry-ish concoction with white beans, roasted red peppers, coconut milk, tahini, and millet

-hottie black eyed peas from the PPK blog, with half sweet potato/half regular mashed potatoes
-typical salad bowl meal I make every week, lettuce with couple different kinds of beans, red onion, carrot, red cabbage, avocado, salsa, some brown rice
-slow cooker lentil bolognese, served over zucchini noodles

Monday- Baked chickpea ratatouille (Dreena Burton recipe testing)
Tuesday- Falafel tacos and Caesar salad. (Keepin' It Kind & DBRT)
Wednesday- Lentil soup & salad.
Thursday- Chickpea, coconut, cashew curry & Indian spiced cauliflower and potatoes.
Friday- Bowls (brown rice, black beans, tomato, avocado, homemade yumm sauce, etc)
Saturday- Creamy Fettuccine (DBRT) & salad.
Sunday- Stir-fry with blanched broccoli.

So Dreena's working on a new cookbook?!? I have recently become a huge fan of her recipes, so that's very exciting!

I used up all the herb and veg from my friend's garden!

All Out Tomato Sauce (from Get It Ripe from around here by Jae Steele) + chickpea parmesan vegan sprinkle from Vegan Eats World. (used all the tomatoes, the last of the zucchini and all the herbs I was given in this sauce)

Zucchini soup (I added spinach) from Quickies: Vegetables, Beans and More by Monda Rosenberg (a Canadian Living series cookbook). This used up most of the football-sized zucchini I was given.

The take out stir fry with shitake and greens (I made some ofthe savory tofu on the weekend to put in when I make this dish later in the week) from Vegan Eats World. Using up the bok choy from my garden haul.

Rosemary Chocolate Chip cookies from Isa's upcoming book. Yum! I made them for testing and they're wonderful. That used up the last of the fresh rosemary.

Sunday was Ethiopian takeout.
Monday: Chipotle orange soy curl tacos on fresh tortillas and slaw
Tuesday: Baked eggplant parm, sauteed brussel sprouts, steamed broccoli
Wednesday: Salad, potato au gratin, cauliflower something or other.
Thursday: Baked beer battered tofu tacos with slaw and chipolte crema
Friday: probably something lazy like tofu pups and fries.

I think the PPK Blog challenge is this week, yes? Well, i am doing anyways since I will be travelling next week (booooo no cooking)

Last night I made the Pesto Risotto and it was freaking amazing, as I knew it would be

Rest of the week:
Mango Fried Rice (from the blog) with curry baked tofu
Broccoli Udon bowl (also from the blog)
Chkn' burgers (for my hunny) and a breakfast burrito for me one night during his radio show. He can only DJ with one hand. Burger in the other!
Sloppy Joes (Adapted from Vcon) with slaw and maybe tots.

This afternoon I just made:

Maple Pecan Blondies (from Eat, Drink and Be Vegan! My favorite blondies when baked in my brownie edges pan. Carmelized edges all around!)

Jambalaya from Quick Fix Vegan

Making tomorrow: Portobello mushroom bake with plain steamed rice to serve over and Swiss chard with garlic (from Garden of Vegan)

Later this week: Italian Style Seitan linguine from American Vegan Kitchen - one of my favorite ways to eat seitan! Such a yummy and flavorful pasta with little effort that I am willing to make on a weeknight!

Yumz all around.

This week I've made 2 adapted cheese's from Vegan Diner (made normal recipe for GSMC but left out the paprikas, doubled the onion & garlic, added some sauerkraut juice, divided into 2 and mixed fake bacon bits into one half, leaving the other as a basic cheese) for lunch, and I'm cooking a few things from Chloe's Kitchen:

Dinner Yesterday: Cheesey Broccoli Soup (without the sour dough bowls) & Sea Salt Toffee Bars
Lunch Today: Pancakes For Dinner
Tonight: Best Ever Baked Macaroni & Cheese
Tomorrow: Thyme For Creamy Scalloped Potatoes (made and ready for cooking tomorrow)
Tuesday: Easy Peasy Pasta Salad (sauce made ready for pasta to be added)
Wednesday: Barley Bliss Casserole
Thursday: Toastie (baked bean sandwich spread with vegan cheese)

something with spaghetti squash

The change in weather is putting me in a comfort cooking mood.

I need to look through this thread more often! It's so hard to find meals that everyone in my house will eat (non-picky me, my 3-year-old vegan kid, and my omni meat-and-potatoes husband). This week it will be:

Mushroom stroganoff
White bean biscuit pot pie
BBQ sausages and peppers over rice
Tofu and kale with peanut curry sauce over quinoa

We should have enough leftovers from those meals to last for dinners through the week. I'm baking bread today, we have loads of salad stuff (including baked tofu, dressing, and roasted sweet potatoes already in the fridge), plus hummus and tinned tomato soup for lunches.

Moroccan Chick Pea Soup (with butternut squash and potato) from Get It Ripe.

General Tso Tofu (From A Canadian cooking show Recipe to Riches -just leaving out the egg called for in original recipe) with rice and broccoli.

Might possibly make some more bagels from Vegan Brunch.

Today I got the fixins' for Seitan Bo Bun Noodle Salad (my fave recipe thus far from Vegan Eats World) and some hamburg buns and baking potatoes for some frozen veggie burgers I made that I have to use up and I'll make some cajun fries (from VwaV) to go along with.
