I was just there in October, but I was with family and most of our meals out ended up being big group things so I didn't get to try many of the places I'd scouted out. But here's my list: Papaya's Natural Foods: This is a health food store with TONS of vegan groceries. Awesome if you have a place to cook or just for grabbing snacks. They also have a hot bar with vegan food, but I didn't try anything from it.
Chutney: Indian/Nepalese place that's supposed to have some vegan options. I really wanted to go here on the last night but got dragged to some godawful broiler place where I had nothing to eat but a dry salad. I'm a little bitter.
Sukothai: Decent-ish Thai food. Not great, but good enough.
Pizzetta: You can get a vegan pizza here if you leave off the cheese and sub marinara for the regular pizza sauce (which has cheese in it). Pretty good.
Olympic Cafe: We randomly stopped here for breakfast and were happy to discover that you can sub tofu for eggs in any of the breakfast dishes. I think they also had some vegan (or veganizable) lunch/dinner options.
Mermaids Cafe: Sandwiches and stuff. This is a vegetarian dining guide put together by a Hindu monastery on the island. I hope you have an amazing trip! It's such a beautiful place. And, yeah, the fresh fruit is heaven.

Lack of job that would keep you away from Hawaii. Money enough to pay for a trip to Hawaii. Many things make you spoiled!
