I'd like to do the kind that has a layer of dark chocolate, then white, then top it off with crushed candy canes. I'm worried if I use straight chocolate and add peppermint extract, it will seize. Anyone have a favorite recipe or any tips so it will turn out okay?

I know they make flavorings specifically for adding to chocolate that won't make it seize... and peppermint (or at least mint of some kind) is pretty popular, so you might check the candy-making section of the kind of stores that have a candy-making section (somewhere that carries a decent amount of Wilton stuff, for example).

Use peppermint oil instead; Pure oils won't cause chocolate to seize, and you'll need much less of it than extract as well.
