 Post subject: Help! Cream Cheese recipe

I want a bagel and cream cheese!
I have tried several cream cheese recipes. I used to make the tofu one from the uncheese cookbook, but stopped a few years ago. Now it's not as good as I remember. I made two different cashew cream cheese recipes I found on pinterest:

This one came out a little too watery, and the taste is meh. I added dehydrated veg soup mix to it to make veggie cream cheese and it was okay, but too thin

This one was also a bit thin, and the cumin was a no. It didn't do what I wanted (to be good on a blueberry bagel!)

So far I'm not a fan of the commercial ones because of price vs. health. Too many odd ingredients, too pricey for what I get, and tofutti is the only one I cared for the taste of.

have you tried Miyoko's from AVC - it has a really nice flavor...

...it takes a couple of days to make, but i think it's the best.

i like to blend it with a little extra fat like coconut milk or refined coconut oil after it's cultured to give it a "creamier" texture.

i really like the cashew tofu one from vegan brunch. it's not cream cheese exactly, but it's a really good bagel spread.

I must be lost, because I looked and looked for one in isa's books and didn't see it. Today, I read this and it's right there. I know I looked in brunch. Blerg.

I found when I made baked almond cheese that draining it in cheesecloth was fairly pointless because not much liquid drained out. So I started skipping that step and just packing the mixture into oiled ramekins and baking on a low heat. Particularly if you take it out of the oven when it's just golden and starting to puff, it's less crumbly and really does have the texture of cream cheese when you mash it with a fork, and you can easily mix spring onions, chives, etc through it. I like it even more when I make it with a blend of almonds and cashews (and I always put a bit of nooch in mine). So that's my suggestion. http://www.maplespice.com/2011/04/baked ... l-oil.html
