I was so proud of myself for this squash. It looks like so much more work than it was. I had packaged baked tofu and the pesto was really quick. Butternut squash stuffed with baked tofu and topped with arugula pesto  Apple Pie Muffins from VWAV  I went over to our old house, the one we planted a garden at then lost all ambition when we realized we were moving. The garden was a complete loss other than three tomatoes and some lettuce from before we moved. And now carrots. Luckily we know the current tenants so I wasn't just digging in someone's yard. There are a few bigger ones (about two inches diameter) but most qualify as baby carrots.

The stuffed squash looks really tasty! I love arugula pesto, too, as I usually have much more arugula around than fresh basil.

Mmmmm... squash! I go on squash kicks, where I'll eat a ton of it, get my cravings out, and then not eat ANY for awhile. However, now I feel the need for squash coming on!
